Chocolate Chocolate Chip Creme Pudding

Was anyone else super into Game of Thrones back in the day?  I have to play my nerd card here and admit that I've read about 3 of the books (back when I had time to read..) and we were SO into the HBO series.  I have this insane crush on Jon Snow, that has been ok'd by my husband as long as I "ok" his crush on Daenyrs...so it's all good, and we talk openly about our love for these fictional characters.

Ok, yeah, we're weird.

But you know what, I dare you to watch one episode and not get hooked, DARE YOU. Then you can come back and point your fingers at me for being such a nerd!  Anyways, you may be wondering why on earth I'm talking about GoT here, and it's because this little recipe has affectionately become known at the "Mother of Puddings," WHICH if you aren't a die-hard fan, you won't catch the nod to Daeny here.  And you know what, I'm not going to fill you in, you just need to go watch the show for crying out loud!

This recipe idea was prompted by my husbands love for Jason's Deli Chocolate Chip Creme Pudding.  You know, the one they stock at the salad bar in a giant tub topped with Cool Whip?  I don’t even know if you can go to Jason’s Deli anymore because COVID, but one day we’ll be back! Many of you might not know that this little dessert exists because if you're like me, you're thinking "why would I stoop so low as to get pudding at Jason's Deli when I can stuff my face with all you can eat delicious creamy soft-serve??"  That was my thought exactly until the hubs practically force fed me a spoonful, and now, I understand.  This is chocolate pudding on crack ya'll.  Not only is it chocolatey, but its got that coconut cream whipped in to give it a little something light and fluffy, plus little bites of joy sprinkled throughout with the chocolate chips...it's a chocolate lover's dream.  Which I just so happen to be, so go me!

No real big caveats with this recipe other than it does take some time to set in the fridge, and make sure you don't mix the cream in until it's set pretty well.  I think I might be the only person in the world that actually likes warm, runny pudding, so do yourself a favor and wait...for....it.....

Chocolate Chocolate Chip Creme Pudding

Ingredients:

  • 1 cup coconut sugar

  • 1/2 cup cocoa or cacao powder

  • 1/4 cup tapioca starch

  • 1/2 tsp salt

  • 4 cups full fat coconut milk

  • 2 tbsp grass-fed butter, ghee, or coconut oil

  • 2 tsps vanilla

  • 1 cup coconut cream

  • 1 cup Enjoy Life Chocolate Chips

Optional Garnishes: more coconut cream, extra chocolate chips

Directions:

  1.  In a medium pot, mix together sugar, cocoa, and tapioca starch.

  2. Whisk in coconut milk, and bring ingredients to a boil.

  3. Once a boil is reached, keep at boiling point for about 2 minutes.

  4. Remove from heat, and mix in butter or oil and vanilla.

  5. Transfer to large bowl and chill in the refrigerator until a pudding like consistency is reached.

  6. Once pudding is cooled, mix in coconut cream and chocolate chips, and chill until ready to be served.

  7. Top with optional garnishes and ENJOY!
