Easy Homemade Marshmallows

I posted about my easy homemade marshmallows the other day, and realized that these little fluffy clouds of heaven are intimidating AF to people - and they totally shouldn’t be! They are SO SO EASY, and so worth it to be able to do a little quality control ingredients wise.

I only recently started experimenting with my own homemade marshmallows after living most of my 36 years on this earth thinking I don’t like them. Like I though I DID NOT LIKE MARSHMALLOWS. But what I really realized was that I just didn’t like the fake weird tasting ones!

There are so many many things you can use these new and improved homemade marshmallows in, and let me count the ways for you:

  • s’mores

  • stuffed campfire bananas

  • marshmallow fluff sandwiches

  • rocky road ice cream

  • rocky road trail mix

  • On top of homemade hot chocolate

And I’m sure there are about 10937738 more ways to use marshmallows that we haven’t even thought of yet! I also love that you can cut these into any shape you like for a fun twist! You can do GIANT rectangles, smaller more normal sized squares, bite sized minis, or take your favorite cookie cutter shape and make them fun!

You can even wrap them up and gift them with homemade hot cocoa mix if you want to!

Before making these, you should know three things:

  1. They take about 3.5 hours total (set time!)

  2. You need to beat the mixture for about 15 minutes - so make sure you’re either using your stand mixer or are ready to sit there with your hand mixer and do the dang thing.

  3. You need true gelatin NOT collagen to make these

Easy Homemade Marshmallows

Ingredients:

  • 2 tbsps grass fed gelatin

  • 1 cup granulated sugar

  • 1 cup powdered sugar

  • 3 tsps vanilla extract

  • 1/4 tsp salt

  • about 1 more cup of powdered sugar for dusting and coating

Directions:

  1. You need the gelatin to set first, so add 1/2 cup cold water to a small bowl and then sprinkle gelatin on top and let sit for about 10 minutes.

  2. While the gelatin is sitting, line a 13x9 baking pan with parchment paper or plastic wrap, and spraying the wrap or parchment generously with cooking spray

  3. In a large saucepan over medium heat, add both sugars and a 1/2 cup water. Whisk continuously over the heat until the sugar dissolves.

  4. Add the gelatin, whisking well to combine. Up the heat to medium high, and bring the mixture to a low boil. As soon as it hits boiling, turn off the heat, and remove the pan from the burner. Pour the mixture into a large mixing bowl and allow it to partially cool.

  5. Once partially cooled, add salt and vanilla, and beat with an electric mixer for about 15 minutes (the mixture will turn white and fluffy and thick).

  6. Pour the mixture into the pan, and let it set for about 3 hours until firm.

  7. Lay out a sheet of parchment paper dusted with powdered sugar, and flip the marshmallows upside down onto the parchment paper. Dust remaining powdered sugar all over the marshmallows, and cut into your desired shapes. Make sure all sides of the cut shapes are dusted with powdered sugar to minimize sticking.

  8. Add to your favorite recipe or hot chocolate and enjoy!
