Blueberry White Chocolate Chip Chia Seed Pudding
Honestly, I’ve always been resistant to the idea of chia pudding and I don’t know why. Maybe it’s because I just like regular pudding so much? PUDDING. What a weird word when you really think about it. PUDDDDINGGG. Yeah, keep saying it, you’re bound to think it’s weird too after repeating it 20 times! I came up with this little delightful dessert after purchasing a GIANT bag of chia seeds from Costco a while back. I hate wasting ANYTHING, so I figured I would get creative and find some ways to chia!
Out of necessity, this Blueberry White Chocolate Chip Chia Seed Pudding was bornd-ed. And it is so good. Truthfully, the base for this, minus any mix ins is just good enough to eat by itself! It’s pretty low sugar and high fat when you leave off the jam and chips - and it tastes amazing!
We use this as a dessert option in our house, and take it to the next level by adding fruit and chocolate. The cool thing is you can really customize it however you want! If you don’t have blueberry jam or white chocolate chips just throw in your favorite mix-ins like:
regular chocolate chips
nuts
coconut flakes
fresh fruit
nut butters
The options are endless! We like to make a big batch and keep it in the fridge to nom on throughout the week! Without further ado, here’s the recipe.
Blueberry White Chocolate Chip Chia Seed Pudding
Ingredients:
⅓ cup chia seeds
1 cup full fat canned coconut milk
1 tsp vanilla
2 tablespoons maple syrup
Blueberry jam of your choice
White chocolate chips (for topping)
Directions:
In a large mixing bowl mix coconut milk, vanilla, and maple syrup well.
Add chia seeds to the coconut milk mixture and stir well to incorporate.
Place the bowl of chia seeds/coconut milk mixture into the fridge to set. This usually takes several hours to firm, but I like to do it overnight.
When you’re ready to eat and the chia pudding has become more firm, remove from the fridge, and whisk vigorously to get the pudding to a more creamy consistency.
In a small bowl or mason jar, add some chia pudding, then a layer of of blueberry jam and white chocolate chips, then another layer of pudding, then another layer of blueberry jam and white chocolate chips. For ease, you can also just put your chia pudding into a bowl and top with jam and chips and go to town.
