Coconut Lime Pineapple Mocktail
Ok, so this little concoction is something I created for myself during pregnancy when I wanted a refreshing drink but was foregoing alcohol. And honestly, it’s relevant right now too as I’m currently deep in an elimination diet (which includes alcohol!).
I swear I'm not an alcoholic, but it's one of those things....you want most what you can't have, and right now I've been craving an icy, delicious ALCOHOLIC Pina Colada, and it just. ain't. gonna. happen. And you know what, I've come to terms with it and moved on, but not without creating some very tasty little mocktails along the way! This is my take on a virgin pina, and the cool thing about this is it's SO EASY, and somewhat customizable too! So take a peek, go mix one up, add some rum if you're so inclined (and I'm jealous if you ARE), but go make these beauts and stick an umbrella in one for me, mmmmkkkkk? Mmmmkkk.
Coconut Lime Pineapple Mocktail
(serves 2-3)
Ingredients:
1 can of full-fat coconut milk (generally 13.5 oz)
1 can of crushed pineapple (15 oz.)
the juice of 1-2 limes (depends on how much tart you want)
1-2 handfuls of ice (or more if you want a more slushy consistency)
Optional:
Honey to taste for extra sweetness
cut the creamy with your favorite sparkling water
add a frozen banana for more smoothie like consistency
Directions:
Throw all ingredients in a blender or food processor and blend.
Serve in a glass with a salted rim, and garnish with lime wedge.
