5 Dessert in a Mug Recipes You Need Right Now
The people have spoken, and what they asked for was a dedicated blog post for all of my mug creations that was easily searchable - so BEHOLD, 5 dessert in a mug recipes that you absolutely need right now in your life.
I really want you guys to believe that I’m some sort of dessert genius, but I hate to burst your bubble and let you in on the fact that I could GO ALL DAY with these mug creations. Once you have the base, it so fun to mix it up! I mean, yeah, it’s really hard to make these mug recipes is what I meant to say. I’ve slaved day after day testing and tweaking so I AM an evil dessert genius is what I meant to say.
But really, because of COVID19 and our shelter in place orders, we’ve been eating all our meals at home, which we were most of the time anyways before quarantine was upon us, but now its ALWAYS. Each night in a fit of stress eating, I’ll crave something sweet and usually I’m either nibbling on dark chocolate, or I’ll whip up something just for me, in a mug, and it hits the spot. I’m not telling you stress eating is the way to deal with all this (therapy helps, for real), but I’m also not telling you that a cookie in a mug will make your world feel worse, amiright?!
So without further ado, let’s dive into my FIVE desserts in a mug that will totally hit the spot and that you need to make right meow.
Double Chocolate Paleo Brownie in a Mug
Ingredients:
2 tbsps grass-fed butter or coconut oil
3 tbsps coconut sugar
pinch of salt
1 egg yolk
4 tbsps almond flour
1 tbsp unsweetened cocoa powder
2 heaping tbsps Enjoy Life Chocolate Chips
Directions:
Melt butter/oil in mug, in the microwave.
Add sugar and salt and mix well.
Add in egg yolk and stir to incorporate.
Add in flour and cocoa powder and mix well.
Add in chocolate chips, and stir to combine.
Microwave for 45 seconds.
Top with additional chocolate chips while brownie is cooling.
ENJOY!
Peanut Butter Mug Cookie
Ingredients:
1 tbsp grass-fed butter or coconut oil
1 tbsp creamy nut butter or nut butter alternative of choice
2 tbsps coconut sugar
dash of vanilla
pinch of salt
1 egg YOLK only
3 tbsps almond flour
Directions:
Melt butter and Sunbutter together in a mug for about 20-30 seconds.
Add sugar, vanilla, and salt and mix well.
Add in egg yolk and stir until creamy.
Mix in flour until well combined.
Heat in microwave for 35 seconds.
Let cool, and ENJOY!
Chocolate Chip Mug Cookie
Ingredients:
1 tbsp grass-fed butter or coconut oil, melted
2 tbsp coconut sugar
pinch of salt
tiny dash of vanilla (yes that's a real measurement term)
1 egg yolk
1/4 cup of almond flour (slightly less for a more gooey texture)
2 generous tbsps of Enjoy Life Chocolate Chips (and extra for topping)
Directions:
Mix melted butter, coconut sugar, salt, and vanilla in a regular sized coffee mug.
Add in egg yolk and mix well.
Stir in almond flour to incorporate.
Add in chocolate chips and mix.
Microwave for 45 seconds.
When you pull it out of the microwave, top with additional chocolate chips, and let cool before eating.

Chunky Monkey Mug Cookie
Ingredients:
1 tbsp grass-fed butter or coconut oil
2 tbsp coconut sugar
pinch of salt
1 egg yolk
drop of vanilla
1/4 cup almond flour (slightly less if you want a gooey-er texture)
2 heaping tbsps of Enjoy Life Chocolate Chips
1 heaping tsp of Sunbutter
1 tbsp of fresh banana, thinly sliced and quartered
Optional: Extra Enjoy Life Chips, Banana slices, and Sunbutter for topping
Directions:
Place butter in mug, and melt in microwave.
Add sugar and salt, and stir to incorporate well.
Add egg yolk and vanilla and mix well.
Add flour and mix.
Add chocolate chips, bananas, and sunbutter and mix to incorporate.
Microwave for 45 seconds.
While cooling, top with optional garnishes and ENJOY!
Pumpkin Chocolate Chip Mug Cake
Ingredients:
1 tbsp butter or coconut oil, melted
2 tbsps coconut sugar
1 tbsp pumpkin puree
dash of vanilla extract
1 egg yolk
pinch of salt
1/4 cup + 3 tbsps almond flour
1 tbsps chocolate chips (+ more for optional garnish)
Directions:
1. Place melted butter in mug
2. Add sugar, pumpkin, vanilla, salt, and mix well to incorporate.
3. Add egg yolk and mix well.
4. Add almond flour and stir to combine.
5. Add chocolate chips and fold in.
6. Microwave for 45-55 seconds (less will be more gooey, more will be more firm)
7. let cool, top with additional chocolate chips and ENJOY!
